We have a set of Filters on the top picker, where the All filter includes Reply Later and Done emails. Marking as done moves the mail to the Done tab (it still exists) to indicate there is nothing more to do with it.
Read / Unread is involuntary and provides the state of the mail.
Note: You have the Unread filter and you can use it to see only Unread mail.
