To hide a contact from auto-complete, go to Settings | Groups & Contacts, select the Contacts tab, tap the 3-dot menu next to the contact, then choose Hide in Autocomplete.
This will prevent the contact from appearing in the autocomplete bar when composing emails, without deleting it.
